POE or Coax security camera system?

I was originally thinking of going with a POE camera system for my home (had been leaning towards the Unifi system), but had a security company come out to give me a recommendation. They suggested I go with coax recording to a DVR instead (Dahua starlight cameras), because of how simple it is to cut the internet to the house, either from the wires that are exposed outside the house or the box (not sure what the right term is) where Verizon patches all the internet for the neighborhood.

This seemed to make logical sense to me. I have a ring security system setup, and had been wondering whether I should go with a hardwired system instead. It makes sense that if you can keep the camera off the network so it keeps running even without the internet that would be useful. However, most of the threads I see on reddit seem to focus on POE cameras, so it kind of threw me for a loop, and I wanted to get some additional opinions.

From what he showed me, he can access his coax video fees from his phone either through an app, or through a web browser, and the video quality seemed pretty good. That seems to cover pretty much the main things I’m looking for:

  1. Good quality picture in daylight/night
  2. Accessible through any device (want to keep it simple for myself and the wife)
  3. Be reliable

EDIT: Thank you for all the feedback! Seems to be the consensus is to go POE, so I’ll continue to explore that option further.
